▪Μοριακή γαστρονομία στο bartending είναι η χρήση φυσικών ενώσεων για την ανάμιξη και μορφοποίηση των υλικών ενός υγρού. Δηλαδή η δημιουργία cocktail σε μορφή σφαίρας, ζελέ, παγωτού και πολλών άλλων! Γνώσεις οι οποίες ήρθαν κυρίως από τον κόσμο της ζαχαροπλαστικής και με τον καιρό εφαρμόστηκαν από βιρτουόζους του μπαρ (και της μαγειρικής) με σκοπό να "ιντριγκάρουν" οπτικά και γευστικά τους καταναλωτές.

▪Όσο περίεργο και αν φαίνεται η μοριακή σε απλή μορφή χρησιμοποιείται χρόνια. Πως γίνεται κάποιες "σκόνες" με νερό να φουσκώνουν στο φούρνο και να γίνονται ψωμί ή άλλες να γίνονται ζελέ; Αυτό ανέλυσαν οι τεχνολόγοι τροφίμων και έψαξαν, βρήκαν και κατηγοριοποιήσαν περισσότερα φυσικά υλικά τα οποία μπορούν να δώσουν ανάλογα αποτελέσματα στην τελική μορφή, αναδεικνύοντας έτσι περισσότερο τη γεύση. Η μοριακή δεν είναι χημεία...αλλά φαντασία!
