We use only copper pot stills, which are renowned for their ability to create heavier, richer rums. Our stills are truly artisanal as they are hand-hammered copper stills made bespoke to our specifications. By distilling each ferment individually, and heating the copper pot stills slowly, we are able to draw out all the possible flavours from each ferment.

We only bottled 300 of our first edition single cask release, which is available to buy now through and . A truly unique bottling.

Our 2023 Winter Release is our inaugural bottling, the first of a series of exceptional rums drawn from single casks at our distillery in Hertfordshire.

We are meticulous when it comes to barrel selection. We only use the highest quality barrels from outstanding producers. We look for different wood types, sizes, grains and history of use to ensure the perfect conditions in which our spirit will mature.

These bottles were drawn from a single French 225 litre oak cask in the Autumn of 2023. The wood was sourced exclusively from sustainably managed French forests and handmade by the expert coopers at Maison Demptos, in the heart of the Bordeaux region. The cask spent its formative years maturing an exquisite muscat wine, before making its way to Hertfordshire where it was filled with our rum distillate in 2020.

This release is selling exclusively through Berry Brothers & Rudd and Harrods online and in their stores.

Launching next week exclusively through our friends at and is our first single cask release.

Three years, three yeast strains, and one exceptional cask.

Distilled in May 2020 using three very different yeast strains across several individual ferments, all copper pot distilled and put into a single French 225 litre oak cask that previously held an exquisite muscat wine.

Bottled at cask strength, 47.2%, non chill filtered and nothing added.

We get:
• NOSE: Rich chocolate and orange cake, with a touch of vanilla ice cream.

• TASTE: Warm spiced pear, with sticky honeyed figs.

• FINISH: Aged to***co and sugared prunes, with layers of marzipan

Limited to three hundred bottles, this 2023 Winter Release is our inaugural bottling, the first of a series of exceptional rums drawn from single casks at our distillery in Hertfordshire.

One of the best parts of distilling rum is being able to work with the epic wine and spirit merchants Our friendship enables us to fill phenomenal casks with our rum and earlier this summer we had the pleasure of welcoming the team and filling a particularly special cask together.

Working closely with Berry Brothers & Rudd hand picking casks, our distillate is paired meticulously with its perfect wood. We have no doubt that these casks are going to bring something pretty delicious to the table. All we have to do is wait a good few years (to say the least) until we can taste the fruits of our labour.

Our Golden rum is now available to buy through Harrods! The iconic store has given us its seal of approval by stocking our rum. Having our bottles sit on their shelves is a testament to the quality of liquid we are distilling here in Hertfordshire. It is huge for any business but feels ever so sweet for Doug and I as a family-run distillery.

Very lovely to see us mentioned in this month. We have always had such enormous support from our fellow Hertfordshire inhabitants. We also have great pride being nestled into this wonderful thick slice of green countryside.

Our Location

We are located in the grounds of a historic country house dating back to the 16th Century. Our distillery facilitated the renovation of a 200-year old stable block, breathing fresh life into a little piece of historic England that had fallen into disrepair. Located at the bottom of a small valley, temperature and pressure swings are more pronounced, enabling defined maturation seasons throughout the year.
