Yesterday I baked a really yummy cinnamon, honey and fruit loaf which I thought I would share with you all. It’s just perfect for an Autumnal tea-time treat. It can be eaten just as it is, buttered, or even toasted!

Recipe:

360ml water
3 tablespoons skimmed milk powder
3 tablespoons vegetable or sunflower oil
3 tablespoons sugar
1 tablespoon runny honey
2 teaspoons salt
625g strong bread flour (white/wholemeal/mixture as preferred - I used 3/4 wholemeal, 1/4 white)
1 tablespoon dried cinnamon (adjust quantity to your own taste preference)
1.5 teaspoons fast action yeast
110g raisins/sultanas

Method:

If using a bread maker, add all the ingredients, except the raisins, to the tin in the order listed. Run on your standard loaf setting.

When the beeper sounds after the first knead, add the raisins and continue until the cooking is complete.

If not using a bread maker, add all the ingredients together except the raisins. When you’ve completed your first knead, and ready to prove, add the raisins and combine them into your dough to prevent them being mushed in the kneading process. Then continue with your normal process you usually would.

As you can see, we didn’t even wait for me to take a photo before we stuck into this loaf.
