The menu never really stands still. Some dishes stay, some evolve, some disappear completely — usually because another idea has taken their place.

That’s probably my favourite part of having my own kitchen. I can cook what feels right, use what’s good, and keep changing things.

What a week it's been at The Stables.

From refining new evening dishes to welcoming more of you for lunch, coffee and dinner, it's been another week full of great food, happy guests and plenty of sunshine in our courtyard.

This is where every new dish starts. A notebook, a rough sketch, and plenty of ideas.

Over the last few weeks I've been working behind the scenes on a refreshed evening menu, tweaking flavours, refining dishes and making sure every plate is worthy of a place on the menu.

I'm genuinely excited to share it with you, and I can't wait for you to try it.
