The Makery

The Makery The Makery is a surplus food project, making yummy brewed, pickled and jammed produce from ingredients that would otherwise go in the bin! How did it start?

Everytime We Brew, We Try Something New! It’s hard not to when you don’t know what you’re getting! The Makery is a community food project, open to anyone, where we take surplus and foraged produce, mix it with lovely organic and local ingredients to create all sorts of fantastic concoctions. We predominantly brew, making tasty alcoholic beverages that are then shared at a wide range of events, par

ties etc. From the ingrediants that just ain’t good to sip (there are remarkably few!) we make chutneys and jams. We facilitate free workshops in brewing, pickling and preserving, so if you would like to learn how to do these things and make produce to take away home, then please do get in touch either on facebook or by email. Anyone can contact us about our goods, we mainly serve by the keg but at an arranged time you can also bring a container of your choosing to our witches hovel and get it filled up with tastyness! The Makery began when 3 wiley ladies had just returned from cycling the length of the UK and needed to reach their fundraising target for Building Man. On the ride they had been told about ginger beer brewing by a fellow cyclist and decided this would be a grand way to make up the pounds they needed. So…carefully following the emailed recipe they diced, stirred and blended until 5 kegs of ginger beer were bubbling away nicely. They sold these at a variety of events and quickly raised their funds. It seemed that the taste of the ginger beer also lingered with others as soon people were asking if they would make more for different things and so…the story began. All three had always been interested in surplus and foraged food, so decided to move the brewing away from the air mile heavy ginger beer and get more inventive with brewing, working with ingredients that would otherwise be thrown away. A petition to call the supermarkets out on their abominal food waste habits. https://www.change.org/p/stop-the-rot-end-supply-chain-food-waste

UK supermarkets and businesses throw out over 7 million tonnes of food annually, before it gets to your shopping basket. That’s enough to lift all the hungry people in the UK out of food poverty . Globally, if food waste was a country, it would be the third top carbon emitter after USA and China. I'…

Foraged Plum Jam

Take Two and Half Kilos(well two after eating) of lovely plums from supposed contaminated land

Add two kilos of tatted sugar from Glastonbury Festival to scored plums

Macerate over night

Heat on low temperature to dissolve sugar

Start removing the stones, the kernels do contain cyanide

Once the sugar is dissolved boil rapidly for 8 minutes, more stone removing

Check jam is at setting point, back of spoon, saucer etc

Put in thoroughly sterilised :/ jars straight away, not two hours later when it's already set

Enjoy the fruits of your labour

For anyone in the South East next weekend head to Wells Food Festival on Sunday 12th. This year they have intentionally sourced as much food from food waste in markets around Bristol, Bath and surrounds to show how good food can still be created from what we deem as rubbish!

We are an annual festival that celebrates the highest quality produce by local artisan vendors!
