New whisky time!
As some of you may be aware, the Ensign is a member of a group called the Independent Whisky Bars of Scotland (see 2nd pic for the full list of members). It brings together some of the best whisky bars from all over Scotland - we are the only bar in Edinburgh - to bottle some incredible casks, and the latest offering is particularly special...
Bottles of Chichibu are hard to come by at the best of times, with this now-legendary Japanese distillery commanding a massive cult following all over the globe. This is a single Oloroso hogshead, filled with spirit distilled from Concerto barley back in 2014. It was matured for 11 years before bottling in late 2025.
This sold out on our website in a couple of hours so now the only place you can buy a bottle (or try a dram) is at the pub.
£270 a bottle.
