What actually makes a sour beer SOUR? (A short, mildly defensive explainer 🍺🧪)

Not vinegar. Not 'going off'. Wild yeast + bacteria (lactobacillus, brettanomyces, occasionally pediococcus) doing what they evolved to do. The brewer's job is mostly 'don't panic and let nature finish the work'.

Our Flemish Golden Sour: to***co on the nose, sour plum and bramble, molasses and dried fruit on the finish. Nature did 80% of it. We just controlled the temperature and tried not to mess it up.
