Last night at The French Kitchen, we travelled through Burgundy the best way we know how: around a table. Beautiful wines. Food made to meet them. Stories from the people who know them best. And a room full of guests genuinely enjoying it all.

That’s really what this dining series is about.

A perfect Friday evening on the patio at ONE Restaurant, celebrating the wines of Château Cheval Blanc and Cheval des Andes.

We began with Champagne and Axyon Toronto caviar before sitting down for dinner, where Pierre Polbos guided us through an exceptional lineup spanning Bordeaux and the Andes:

It was a rare opportunity to taste these wines side by side, and to hear directly from Pierre about the people, places and philosophy behind each bottle.

From the western reaches of the appellation, Isole e Olena has long championed Sangiovese and a style built around elegance, perfume and a true sense of place.

The 2023 leans into the bright, fragrant side of Sangiovese: violets, crunchy red cherry and orange peel, with subtle spice, fine polished tannins and a fresh, mineral finish. Beautifully approachable now, with plenty of life ahead of it.

On August 26th, we’re taking over The French Kitchen for a very special night through Burgundy; five producers, five wines, a menu created by Master Chef Didier Leroy, and one very good table.

From Chablis to Pouilly-Fuissé and into the Premier Cru vineyards of Beaune, each course has been created specifically around the wine in your glass.

Some places have a remarkable way of transporting you through time.

Walking the grounds of Castello della Sala, it’s impossible not to imagine the centuries of history that have unfolded within its walls. Built in 1350 and acquired by the Antinori family in 1940, the estate is a beautiful expression of how history and innovation can exist in perfect harmony.

One of the highlights of our visit was descending into the estate’s extraordinary underground cellars. Carved beneath the medieval fortress, these historic caves have provided the ideal conditions for ageing wine for generations. Today, they remain home to some of Italy’s most celebrated wines, including the iconic Cervaro della Sala, a testament to Antinori’s enduring vision for Umbria.

Over the past few days, our team has fallen for Puglia’s ancient olive groves, dramatic landscapes, warm hospitality, and a way of life that feels beautifully connected to the land. It only deepened our appreciation for the wines we’ve known and loved for so many years.

More than 20 years ago, the Antinori family recognized the extraordinary potential of this region and invested in a vision: to elevate Puglia’s indigenous grape varieties, some dating back to the era of Magna Graecia, to the highest level. That vision became two estates: Bocca di Lupo in Castel del Monte and Tormaresca in Salento, each telling a different story of this remarkable region.

Seeing Bocca di Lupo firsthand made that vision tangible. Every vineyard, every conversation, and every glass spoke to a deep respect for place and tradition.

We fell in love with these wines long ago. This week, we fell head over heels in love with Puglia.

A long lunch at Pian delle Vigne with winemaker Fabio Ratto, where every bottle came with a story and every conversation offered a deeper understanding of the estate.

Tasting through the Rosso di Montalcino, Brunello di Montalcino, and the remarkable Vignaferrovia was a masterclass in how place, patience, and time shape each wine.
