Something new for you: Hopped Modern Soda!
Remember that truckload of fresh hops we got from a neighbor last year, and the still we borrowed from another friend? Well, add in Lots Of Time et voila. I’ve been wanting a non-alcoholic hopped drink for a very long time but kept getting stuck at a common obstacle… it has to actually be good. Not kinda good, really good. Great, in fact. Hops are not readily amenable to this outcome in this format, so it’s been a many-years-long project, pre-dating all our other sodas in fact. Turns out distilling, although very long in process, did the trick… all the beautiful aromatics and floral flavors without *any* bitterness or vegetal undertones. I’m unsure there’s any payback for the amount of work this was to make, but it’s deliciousness is very worth it.
We chose Amarillo and Mt Hood hops because, well, that’s what we were given. Now we have the process down, there’s a list a mile long of other hops and combinations we’d like to try. For now, these two varietals evoke a very grapefruit/lemon citrus tone and some peppery spice behind them, though the finish is remarkably floral and light. I seriously wouldn’t have expected them to produce such delicate and outstanding results, but they did.
As with all Modern Sodas, low sugar, low acid and no weirdo chemicals or cane sugar.
