IRI PIRI SAUCE
Make your own customised sauce as hot as you can tolerate or mild so the kids can eat it. Great marinade for tofu “chicken” served over yellow Portuguese rice (next video). Make a big batch & freeze. The air fryer made it so simple & quick.
INGREDIENTS
* olive oil to spray or drizzle to coat(air frying)
* 1/3 cup olive oil (add to blitz)
* 3 red capsicums-chunky slices
* 1 red onion-thick sliced
* 1-2 chilli [adjust to taste]
* 1 [250g] punnet cherry tomatoes or 4 tomatoes
* 1 lemon zest
* 1 lemon juice
* 1 Tbsp fresh ginger-minced
* 8 garlic cloves
* 2 tsp cayenne pepper [adjust to taste]
* 1 Tbsp paprika
* 2 Tbsp salt
* 1 tsp black pepper
METHOD
* Roughly chop veggies.
* Place in large mixing bowl.
* Spray or drizzle oil to coat.
* Add seasonings.
* Toss until well combined.
* Transfer to air fryer basket.
* Roast on 200°C/400F for 30-40 minutes.
[adjust to your own air fryer]
* Shaking halfway.
* Transfer to bowl or jug.
* OPTIONAL SKIN OFF:
* Cover with plate let cool strip off skin
* Add remainder of oil.
* Blitz in food processor or with stick blender until smooth.
* Add water if too thick.
* Store in air tight container in fridge for 2-3 weeks or freezer 3 months.
