IRI PIRI SAUCE
Make your own customised sauce as hot as you can tolerate or mild so the kids can eat it. Great marinade for tofu “chicken” served over yellow Portuguese rice (next video). Make a big batch & freeze. The air fryer made it so simple & quick.

INGREDIENTS
* olive oil to spray or drizzle to coat(air frying)
* 1/3 cup olive oil (add to blitz)
* 3 red capsicums-chunky slices
* 1 red onion-thick sliced
* 1-2 chilli [adjust to taste]
* 1 [250g] punnet cherry tomatoes or 4 tomatoes
* 1 lemon zest
* 1 lemon juice
* 1 Tbsp fresh ginger-minced
* 8 garlic cloves
* 2 tsp cayenne pepper [adjust to taste]
* 1 Tbsp paprika
* 2 Tbsp salt
* 1 tsp black pepper

METHOD
* Roughly chop veggies.
* Place in large mixing bowl.
* Spray or drizzle oil to coat.
* Add seasonings.
* Toss until well combined.
* Transfer to air fryer basket.
* Roast on 200°C/400F for 30-40 minutes.
[adjust to your own air fryer]
* Shaking halfway.
* Transfer to bowl or jug.
* OPTIONAL SKIN OFF:
* Cover with plate let cool strip off skin
* Add remainder of oil.
* Blitz in food processor or with stick blender until smooth.
* Add water if too thick.
* Store in air tight container in fridge for 2-3 weeks or freezer 3 months.

I never thought I’d experience one of my all time favourite Portuguese dishes since going Vegan, but this alternative version has blown me away. It took me back to my Mae’s food, the nori sheets & dulse flakes created the perfect fish/seafood flavour. Adjust the chilli to your taste as well as the salt. A must to try & for the non-vegan version just replace the tofu with actual fish-most will work & simmer for 20 min or until fish is cooked. Enjoy-Serve over rice or crusty Portuguese bread!

Portugal’s National Day is June 10, 1580, the date of Luis Camões’ Death.

Luis Camões was an adventurer who lost an eye in battle. He wrote an
epic poem “OS LUSIADAS” and survived a shipwreck. During the
shipwreck Camões saved his poem by swimming with one arm while keeping
the other above water. Camões became a national symbol of Portuguese
culture and literature.

It was so good to see that last night at a swanky do they had Portuguese BBQ (non Portuguese) & even more amazing it was authentic espetada(traditional Madeiran skewered meat) & even done by a Madeiran...it was definetely as good as my brothers!!!YUMMO & they even served it traditionally everyone just grabbed the meat straight off the skewers...I think I'll add that recipe next :)
