Damn it.......I knew this was a bad idea.
Tossing the freshly boiled and roasted bunya nuts with butter and taijin.Ill have to cook some more it was so good

Boiled the Bunya pine nuts for an hour then cooled in the fridge overnight. I then had an idea of getting them in the airfryer to roast instead of using the oven so it doesn't heat up the whole house.I found a sweet spot at around 15 minutes on 200°C to roast and take some of the moisture out.The aroma is like shortbread butter cookies. I will do the rest of the nuts as straight roast in the airfryer without boiling as that produced a more traditional flavour profile and consistency as a normal pine nut

Bunya Pine nut vs Pine nuts

Decided to go urban foraging today and try my luck at finding a whole bunya pine as they are in season. I saw quite a lot of empty pine nut shells on the ground from birds and was thinking I would find an in fact bunya pine cone. I did find this un eaten nut which is next to the lime. The pine cone weighs roughly over 10 kg. Now I will break this apart and get the pine nuts boil and roast and use some for pesto.

This was crisp and refreshing mid course and the jalapenos had enough zing for you to want more

I could eat 6 portions of this.
The emulsified garlic butter was delicious and silky smooth and mopped up with sourdough and creamed truffle butter.
