Boiled the Bunya pine nuts for an hour then cooled in the fridge overnight. I then had an idea of getting them in the airfryer to roast instead of using the oven so it doesn't heat up the whole house.I found a sweet spot at around 15 minutes on 200°C to roast and take some of the moisture out.The aroma is like shortbread butter cookies. I will do the rest of the nuts as straight roast in the airfryer without boiling as that produced a more traditional flavour profile and consistency as a normal pine nut

Decided to go urban foraging today and try my luck at finding a whole bunya pine as they are in season. I saw quite a lot of empty pine nut shells on the ground from birds and was thinking I would find an in fact bunya pine cone. I did find this un eaten nut which is next to the lime. The pine cone weighs roughly over 10 kg. Now I will break this apart and get the pine nuts boil and roast and use some for pesto.

I could eat 6 portions of this.
The emulsified garlic butter was delicious and silky smooth and mopped up with sourdough and creamed truffle butter.
